Here are a few pictures and links to the recipes from last year and this year’s Ramadan, I’ll try to add on more as the days progress :

1. Arayes :

To 1 cup of cooked ground meat, I added in 1/4 cup finely chopped tomatoes, 2 cloves garlic, 2 tbsp parsley and 2 tbsp minced onions. Mixed in a dash each of cinnamon, cumin, pepper, sumac, salt and pepper. I then stuffed and baked the pitas until crispy.

2. Pizza :

For the pizza dough – Add 1 tsp sugar, and 1 tbsp yeast to 1 cup lukewarm water. It should froth up in about 2-3 minutes. In a mixing bowl, add 2.5 cups All Purpose flour, 1 tsp salt. Make a well in the center, add water+yeast solution , 1/4 cup milk, and 2 tbsp olive oil. Knead to make a dough. Cover the bowl and let it rise for atleast 45 minutes. Once risen, punch down the dough, divide into two parts and roll out for your crusts. I baked mine for about 12-14 minutes, at 400F. I start the pizza on the pizza tray, then after five minutes, I slide it right onto the oven rack, so the crust base cooks evenly and turns a lovely toasty golden brown.

BBQ chicken pizza topping – take one chicken breast, chop into bite size pieces.
