How are you all doing? Hope your Ramadan and quarantine is going well. What are some of the new things you guys have had a chance to try out lately? Foe me, it’s been making more traditional and time-consuming dishes because I’m not out as much for work, kids’ school or anything else. Check out my FB or insta page to see what I’m talking about.
With the hours all different in Ramadan, I try to nap when possible. Today, I went to nap thinking I’d make nachos for tonight, and woke up dreaming of Chicken Tikka nachos for our #unfriediftar instead😂. I even dream about food 🤦, although this one has an added bonus of being kinda healthy.
Anyhow, really yummy recipe, toasted tortillas on the bottom, creamy yogurt chutney sauce and a bunch of veggies with the spicy chicken on top 👌
Tortilla layer : slice two whole wheat tortillas into ‘chips’. Place on a greased tray, sprinkle with a little bit of salt, paprika and cumin powder. Spray with a some oil. Bake at 350F for 10 minutes. Set aside.
Make Chicken Tikka as per your fav recipe or use mine 🙂
Pickled onions : Stir together 2 tbsp vinegar, 1 tsp honey, pinch of salt and pepper. Toss in 1/4 cup sliced onions. Let it marinate for 30 mins.
Yogurt chutney sauce : Whisk 1/4 cup yogurt with 2 tbsp green chutney, 1 tbsp lemon juice, 1/4 tsp salt.
Other veggies to be chopped : tomatoes, cucumbers, olives, lettuce, cilantro
Assemble : Place chips on your serving plate, drizzle a bit of sauce over it, add on veggies + drained pickled onions, put in chicken tikka pieces, generously drizzle more sauce. I didn’t have tamarind chutney but I feel that would make a really good addition to drizzle onto this recipe. Or maybe even canned chickpeas or boiled potatoes. Eat immediately.
Everyone gobbled it right up, even my youngest , although she did remark that I was tricking her into eating salad by calling it nachos 😂
