#unfriediftar

Last year the #unfriediftar theme went over so well, that people asked me about it this year as well. Here are a few pictures and links to the recipes from last year and this year’s Ramadan, I’ll try to add on more as the days progress :

1. Arayes :

To 1 cup of cooked ground meat, I added in 1/4 cup finely chopped tomatoes, 2 cloves garlic, 2 tbsp parsley and 2 tbsp minced onions. Mixed in a dash each of cinnamon, cumin, pepper, sumac, salt and pepper. I then stuffed and baked the pitas until crispy.

2. Pizza :

For the pizza dough – Add 1 tsp sugar, and 1 tbsp yeast to 1 cup lukewarm water. It should froth up in about 2-3 minutes. In a mixing bowl, add 2.5 cups All Purpose flour, 1 tsp salt. Make a well in the center, add water+yeast solution , 1/4 cup milk, and 2 tbsp olive oil. Knead to make a dough. Cover the bowl and let it rise for atleast 45 minutes. Once risen, punch down the dough, divide into two parts and roll out for your crusts. I baked mine for about 12-14 minutes, at 400F. I start the pizza on the pizza tray, then after five minutes, I slide it right onto the oven rack, so the crust base cooks evenly and turns a lovely toasty golden brown.

BBQ chicken pizza topping – take one chicken breast, chop into bite size pieces. Cook with 1/2 tsp salt,1/4 tsp pepper and 1/2 oregano till done. Measure 1/4 cup BBQ sauce in a bowl. Add chicken pieces to sauce and stir to coat well. Roll out pizza dough, spoon out 1/4 cup pizza sauce + 1 tbsp bbq sauce over the base. Add 1/4 cup mozzarella. Top with 1/2 cup chicken pieces, 1/4 cup sliced red onion and 2 tbsp cilantro. Sprinkle 1/4 to 1/2 cup more cheese and bake till done. Garnish with more cilantro. Make the rotis with 3/4 cup all purpose flour, 1/4 cup whole wheat flour, 1/2 tsp salt, 2 tbsp butter and 1/3 cup water. Knead and roll into rotis. Makes 5.Whisk one egg. Heat a fry pan and while cooking each roti, brush some beaten egg on both sides. Cook all the rotis and keep aside.

The filling is made with shredded chicken tikka or tandoori chicken, mixed with 1 tbsp each of tamarind chutney, chilli garlic sauce and ketchup. Add 1/2 tsp sriracha sauce, 2 tbsp chopped green onions and 1/4 cup chopped bell peppers and onions.
Fill the roti with the chicken+veggie mix, roll like a burrito and lightly toast on a fry pan sprayed with a little bit of oil. Serve warm.

Same fillings and crepes as the foldovers, except you layer these in a greased pie dish, and top with a beaten egg, and bake at 350F for 30 minutes. See the link below for the basic recipe :
